Brown butter: a welcome guest in the kitchen

Brown butter is a highly flavorful butter used in both cooking and baking. It is made from unsalted cow butter by heating it so that all the milk solids burn off, leaving only the fatty part. This oil has a wonderful nutty, toasty aroma that can add sophistication to dishes. After filtering and cooling in the refrigerator, it becomes the famous ghee.

Сooking method

1. Place the unsalted butter in the stewpot and start heating

 

2. The butter will quickly melt, foam and begin to burn

3. Wait until the color of the butter darkens and all the liquid becomes clear

 

4. Strain the butter into a heatproof bowl using a metal sieve or coffee filter 

 

You only need the filtered clear part, all burnt particles should be removed. I actually used this oil to make the cake so I didn't have to worry if few bits weren't filtered out. If you want a very pure product, it is better to use a finer filter.
